First things first, let me tell you a little known secret: I Love To Bake…boozy desserts 😉
We all have things that we like to do either when we are feeling down to help us feel better or things we do when we are in a good mood.
Then there are some things or hobbies rather that we can do regardless.
I have found quite by accident that I can’t bake when I’m not in a good place emotionally. If I’ve ever told someone that I’d bake them a cake and neglected to follow through, it was in times in my life when I was in a negative emotional space like dealing with grief, transition, suffering loss or disappointment that I had not taken time to process.
They say hindsight is 20/20. Looking back, I’ve realized that baking is something I do when I’m in my happy place to express my joy, love, peace and allow my sun to shine. It’s not something I can do well from a place of deficit.
So the next piece may come as no surprise
Baking is a creative outlet for me.
The moment it ceases to be fun, I stall out or stop.
Baking is a creative space for me that I operate in when I’m in a good place.
Therefore I don’t bake on command.
My baking adventures typically start from a thought or desire.
Ex: “Hmm I’ve been craving brownies. Buuut I want some caramel too. Let me look at a ton of recipes, narrow it down to 2 or 3 that I really like, take what I already know about baking brownies, and bake something to my fancy.”
Periodically, I’ll find a recipe I really like and give it a try the way it’s written the first time, then twerk it 😉 from there! I may also taste something and go home and try to recreate it in my own kitchen instead of constantly paying someone else to do something I can do myself while having full command over what I’m doing.
Blame It On Rona
Over the last few months, I’ve had an obsession with trying Tripped Out Rice Krispie Treats.
This is odd because I never ate them growing up and have probably only made them once as an adult prior to quarantine.
But that darn Rona got me in this kitchen trying all kind of random Rice Krispie Treat variations.
Some have turned out better than others. I’ll share my favorite thus far for our first trip into my kitchen. So with no further ado welcome to Khe’s Kitchen. Today we will be having Red Hot Rice Krispie Treats
THIS GOES OUT TO ALL MY HOT TAMALE & FIREBALL FANS OUT THERE!
Around Easter, an unnecessary variety of other flavored Peeps line the shelves. This year, my best friend sent me a pic of these and said “OMG girl you’ll never guess what they’ve got in the stores” because she knows I’m a die-hard Hot Tamale lover.
I however, am NOT a Peeps Fan. But I figure, what the hay, let’s try it out!
6 cups of Rice Krispies
1 pack of sliced Hot Tamales (or whatever is left from snacking on them as you cut 😉 #nojudgement
3 packs of Hot Tamale Peeps (melted with 3 tablespoons of butter in the microwave *go slow and watch closely so as not to burn)
Quickly pour Rice Krispie and Hot Tamale mix into melted chicks
Press into pan and don’t forget to drizzle them with a shot of your favorite Fireball
Let sit for 1 – 2 hours and…
My favorite thing about these (other than the whiskey) is the color! The texture was a little off -think I’ve got some fixes below for that. But the taste was delicious!!
Things I’d do differently:
*Use more butter
*add some regular marshmallows in to help regulate the consistency
*Mix the Fireball into the butter and marshmallows while melting
*Not pack the Krispies so tightly into the pan –this also helps with the consistency of the Treat once set
